Spongy Dinner Rolls 

Dinner rolls are the holiday buns per excellence in American culture. No thanksgiving or Christmas table without those delicious rolls. If you like  them fluffy and spongy but yet buttery and light, this is the perfect recipe for you. I was thinking about a special recipe where the words gourmet and healthy goes together in a happy marriage. If you are wondering how? because, i simply combined the rich flavor of butter, the moist of milk and the fluffiness of the fancy durum flour. And there something that people don’t take in consideration when baking, is to always sift your flout. This technique is highly recommended when you want to obtain a soft and fluffy baking product as well as bread and cakes. This recipe is very simple no magic in it, just follow the instruction and you are good to go. 














Yield: 16 rolls.
Prep time: 15 min.
Bake time: 25 min.

Ingredients :

. 3 cups flour 
. 2 cups fancy durum flour
. 1/2 cup dry milk 
. 4 tbsp evaporated milk
. 2 tbsp oil 
. 1 tbsp dry yeast 
. 2 tbsp sugar 
. 1 tbsp salt 
. 4 tbsp room temperature unsalted butter 
. 12 fl oz warm water.
. Egg wash (1 egg+1 tbsp milk) to brush the rolls.

How to make it:

In a stand mixer, pour only 4 oz of warm water, dry yeast, sugar. Stir and let is dissolve. 
Meanwhile, sift the flour and the fancy durum flour and add over the yeast mixture. Add the dry milk, evaporated milk, oil, salt and knead everything together in a medium speed, like start with 1,2 then 3 speed for about 8 minutes. Add the room temperature butter and knead again for 3 more min. 
Cover the bowl and let it proof in a warm place until double in size, like an hour or so. 
Preheat the oven at 350 F. 
In a cake pan, square or round, line a parchment for an easier removing. 
Punch down the dough and form 16 balls. Place them beside each other like shown in the first picture. 
Proof the rolls for 30 min. 
Brush with egg wash and sprinkle sesame or leave it plain. 
Bake for 25 min until having gold crust. 
And bonne appetite. 

Note: 
This bread stay fresh longer then other breads, even without freezing on reheated it.
