Magic dough, pizza, buns...


Today I’m sharing with you my spongy and delicious dough good for stuffed buns with spinach, cheese, ground meat... good for pizza and calzone, good for burgers and hotdog buns, hoagies, garlic bread. Also, sweet recipes, you can fill the buns with custard, sweetened  cream cheese filling and fruits, cinnamon rolls, or just bake it and brush it with some better, honey and drizzle some toasty crushed nuts... the list is long. I think all those yummy recipes you always wanted to try it this dough will lift the bar of possibilities very high. Today I made a stuffed buns with ground beef, vegetables and cheese, also another stuffing with cabbage that i like to have it in winter. In the spring and summer i like to use the spinach filling. You just cook in olive oil some chopped onion and add spinach in it, salt and pepper, add some cayenne pepper if you like the spicy taste or sprinkle some feta cheese for even fresher taste. 
The dough takes about 40 minute from the beginning to the end. After 40 minutes you can start baking it. 
But if you like so much the magic dough, and I’m sure you will, make an extract batch every time you make it. Use the first batch the same day and store the rest in medium balls in zip bags and freeze them. They last more then 3 months in the freezer. For thawing, pull out your dough from the freezer 4 to 5 hours in advance and enjoy working with it. 







Yields: 12 buns 
Prep time: 15 minutes 
Rest time: 25minutes 
Bake time: 20 minutes 

Ingredients:

  1. 5 cups all purpose flour 
  2. 2 cups warm water
  3. 1 cup warm milk
  4. 1/2 oil (olive or corn oil are fine too)
  5. 1 egg optional (more fluffy)
  6. 1 tbsp sugar
  7. 1 tbsp yeast 
  8. 1 tsp salt 

How to make it:

  • First Sift the flour. in a mixer, pour warm water, milk, yeast, sugar and half quantity means two and half cups of sifted flour and combine well. Don’t over mix. Cover with plastic wrap and set aside for 10 minutes. 
  • Uncover the bowl and add the remaining flour, salt and oil and knead until elastic and non sticky dough. Put like 1 tsp of oil in your hands and wrap the dough so it not stick in the bowl edges and cover again. Let it proof in warm area for about 20 to 25 minutes or until it doubled in size. I heat the oven at 150F and turn off then i place the bowl inside the oven, this way I accelerate the process.
  • Punch down the dough to release the gas and shape it in balls as desired. Use it for your baking and enjoy delicious dinners and breakfasts with the magic dough. 

Tips:

If you don’t have time and you want to be done in 15 minutes. Put 2 tablespoons of yeast and 1 tbsp of baking powder that way the process gonna be much faster.
