Flavory Blueberry muffins

I just moved to my neighborhood, and got lots of cookies from my nice neighbors. Then, decided to thanks them with a yummy blueberry muffins because i was sure everybody likes them including me. I started to do some research about the ideal recipe and came up with my own formula, because i did more then 3 dozen of muffins to distribute in the neighborhood. The first dozen has the taste of to much flour, the second start to be better and the third was perfect. However you’re a good baker it doesn’t comes from no where, the trial and error has to do a lot here. Over the year and the experience you get to your favorite recipe of anything you like to share with people. This blueberry muffins are just spongy, moist and flavory enough to enjoy every bite. Easter in soon so maybe this gonna be the recipe to share with your family and friends. 



Yields: 12 muffins 
Prep time: 5 min
Bake time: 35 min 

Ingredients:

  1. 1/2 softened butter
  2. 1  1/4 cup sugar 
  3. 2 eggs
  4. 1 tsp vanilla extract 
  5. 2 cups all purpose flour 
  6. 1 tsp salt 
  7. 2 tsp baking powder 
  8. 1/2 cup buttermilk (can use milk with a splash of vinegar if you don’t have buttermilk on hand) 
  9. 2 cups blueberry 
  10. 3 tablespoons of sugar

How to make it?

  • Preheat the oven to 400. 
  • Cream the butter and sugar until light and fluffy.
  • Add eggs one at the time and beat well.
  • Add vanilla and buttermilk, mix well
  • Sift in the flour, salt and baking powder and add to the creamed mixture. 
  • Fold in the blueberries into the batter. 
  • Sprinkle the 3 tbsp of sugar over the muffins 
  • Fill the 12 cup tin to 3/4 to let the muffins room to rise. 
  • Reduce heat to 375F and bake about 35 minutes or until the knife come out clean.

Tips:

If you feel the next day that the muffins are little bit moist and you want to refresh them, heat the oven and bake for 5 min to give your muffins a fresh taste over and over.
