Ultimate quinoa salad

If you didn’t try at all quinoa grain or quinoa salad? This is your chance to fall in love with quinoa.  This salad is just a 100% of goodness and taste. Very tasty but yet very healthy. What i like about it, it's the most interesting salad I’ve ever had. It is a real joy with every fork in your mouth. Between the different texture of the crisp of the quinoa grain, the softness of chickpeas, The crunch of spinach and onion and finally, the Acid of tomato and lemon juice. Believe me, its a fantasy in your mouth. 


Cook time: 25 minutes 
Prep time: 10 min
Yields: 4 people 




The ingredients:

1 cup boiled quinoa 
1 cup boiled or caned chickpeas 
2 cups baby spinach 
1 tomato cut In cubes 
1/4 cup chopped onion 
Bunch of parsley 
2 tbsp Olive oil
Lemon juice 
Salt 
Black paper 

How to make it:

Cook the quinoa following the instruction in the packaging. Cool it and Set a side 
Cut the tomato, onion, parsley. 
In a large bowl put together the Quinoa, tomato, onion, parsley, spinach, chickpeas. Add olive oil, lemon juice, salt and pepper. 
Mix well the salad and serve immediately. 




This salad is full of nutrients. It can be a great lunch to take to work or just as a salad in you dinner or when receiving.
